In my opinion, the order date is the "conception" date, and the final assembly date is the "birth" date.
That is why every car and truck brochure has its fine-print disclaimer on the back about 'we reserve the right to make continuous improvements, or discontinue models without prior notice' etc., in the event there was some design change between the order date and final delivery date.

I do agree that the final assembly date is indeed the birth date, (as does the FTC and NHSTA). Some cars do have the misfortune of NOT making it to a dealer due to a mishap along the way. So some record of the car(s) that got destroyed would HAVE to be in place, or they wouldn't have any proof of loss in the event.
