Has anyone converted a 289 to fuel injection? I am making a daily driver out of my 62 hawk and was wondering if this had been done.

Sure, the bolt on throttle body is the easiest. One step up from a carburetor.
The direct port injection would be harder to adapt to the Stude because of welding injector bungs to the manifold, but in the end well worth the effort. Many Bonneville racers have done this to their Stude engines.

The port injection will also be more expensive thAn the throttle body style. Look to spend upwards of $3500 for the direct port, maybe $1000 or so less for Holley, Edelbrock, Accel, etc., throttle body.

Out of the current Summit catalog...from $2000 to $2700 for a direct port setup for the big three, then youl'd have to adapt it to the Stude's manifold and small cubic inches. The small Chevy or Ford ECM may be very close.
