We have a 59 Lark 2DHTP. We drive around with six adults in it (we do not have seatbelts). You have to be friendly, as you ARE shoulder to shoulder. It's about the ride and the fun times. With your kids the size they are, I would put 3 in the back and one kid in between Mom and Dad in the front. One car seat in the middle in the back. Hopefully you'll find one with a V8 and A/T rather than the 3 speed OD so it's less work for the driver.
When I was a kid, we always went to church in a 60 2DSDN with 2 adults and one teenager in the front and one adult and two elementary kids in the back. We never had seat belts in any.
Yes, you can do this! There is more room in the back seat of my Lark than there is in either row in our Chrysler minivan.
Make sure that if you DO install seat belts that they get an over-sized ROUND washer attached below the floor to prevent pull-through. Standard hardware for seat belts is 7/16"-20, grade 8 bolts to go through the floor.
