Evidently the published offset dimension for your wheels is WAY off. That's where the big difference is. My 2017 wheels measure closer to 5 3/8" backspace when measured as you did. So my wheels extend 1 1/8" further inboard than yours, explaining why they touch the steering arm/tie rod end.
If you decide you need to further limit your steering it can be easily done by adding a shim to the small triangle shaped spindle stop at the bottom of the spindle where it contacts the trunion.
