Is it "normal" for things on build sheets to be "Xed" out, and things like shipping dates to be left blank?

Yep, crossed out, hand written notes, typo's and just plain mistakes are not uncommon.

Absolutely. That one X-ed out notation as to color is actually clean compared to some I've seen with scribbles all over them! BP
