My valve covers and air cleaner on my 62 Hawk are a medium blue semi-gloss. Are they supposed to be yellow?

Yup. black block, heads, and pretty much anything cast, yellow valve covers, orangey-red fan and breathers.

Not trying to start an argument, but I've owned three Studes and they have all had Black valve covers.
A 58 Hawk with a 289, a 60 Hawk with a 289, and a 61 GT Hawk 289.
A friend with a 58 Hawk 259 had Yellow valve covers.
I've also seen rusty silver valve covers on some with decals.

As were the covers of his '58 Hawk. The 61 should have had red valve covers but all three years had silver blocks.
