How would you get around the problem of having an electronic speedo sender unit, from a non-stude tranny, running the original cable driven speedometer?

It will depend on the MFG and year. Most of the manufactures as they converted from cable drive to electronic kept the gear drive setup to turn the electronic sender and you can just substitute an earlier gear driven cable unit. Hopefully this will be your case.

If you need the electronic signal for a computer control and the cable drive then it can get tricky but is do-able with the correct adapter.
