I am running 215-75-15 tires on 15 x 7 custom rims, the wheel wells are full but they do not rub

Mine's a '63, with a little different wheelwell opening, but the PO put Cragar S/S 15x7 rims on the back with P225/70 R15 Cooper Cobras.

They've rubbed a little about 4" above the lip but that's just because the springs are nearly flat [V]

The size of the tire that you can use is dependant on the off set of the wheel(rim), the condition of your springs and the profile you want. When I first put mine on they would rub once in awhile. That stopped after I put new rear springs on. There are tire size calcalators on the internet that will help you.
