What color should the engine be for a 1962 289 engine?

If you have an auto trans. the dipstick handle for that is yellow. The engine oil is orange/red as JDP says. Everything else is pretty much black except for the valve covers and breathers. Fan is the same orange/red as the oil dipstick and breathers.

If you have an early '62 with partial flow block ("stack" on the front of the engine with single breather, no breathers in valve covers) the breather is still orange/red.

Please make note that the "caution fan" and "STP" stickers shown in the referenced picture are not correct for a 1962 engine.

really? I thought that they were; haven't put either on mine but there is definitely a little metal thing above the fan. Car was pretty unmolested when I got it so I am sure that everything was original except for the interior, for some reason.

Yes, 1962s had the "little metal thing above the fan." It was the 1963 and up decals that I said shouldn't be there.
