what does air conditioning cost?

For those of you in the know, I'm curious what the price tag is to add air conditioning - '57 Hawk.

From $400 or so for a used setup to around $1000 or more for a new Vintage AC kit. look for a 61-64 GT Hawk unit, they are not that rare or expensive. If you have a Golden Hawk, all bets are off.
