I'm probably overthinking this but I don't want to mess up a perfectly good gasket: I was going to smear some Permatex Ultra Copper on both sides of the gasket as a sealer prior to installation. Is this OK to use or is something else recommended?

I have always used Permatex form-a-gasket #2 on every water connection
and on both sides of the gasket. I have yet to have a leak after. Its
a little trouble taking it apart the next time, but if it doesnt leak
you dont have too!

If the mating surfaces are good, there really is no need for anything on the gasket (IMHO)

I agree with Tom on this one.
