Does anyone have a drawing/design for the dashboard, and the functions of each switch? I'd love to verify what I think I know.

I do not have one but you should also be able to get this information from a combination of the Owners Manual and the Chassis/Body catalogsMilt

The Owner's Manual will have that, plus chassis lube charts, etc. If there isn't one in your glove box look for it through our vendors or online auction sites.
